Ssh! This is a super secret, double probation, cross-your-heart-don't tell no one formula for authentic San Antonio chili-con-carne.
Back in the day, San Antonio hookers used this recipe to attract their clients with great success. The boys got laid, and got some good chow on the side.
2 lbs fatty beef, cut into 1/2" cubes
1 medium onion, chopped
3 cloves garlic, chopped
3 slices bacon, fried and drained
1/8 cup chili powder
1 & 1/2 teaspoon sweet Paprika
1/2 teaspoon Cayenne powder
1 teaspoon Mexican Oregano
1/2 teaspoon Cumin, also known as Comino Powder
2 cups Beef Stock
1 12 oz. can of Lone Star Beer
2 chipotle peppers chopped, with adobo sauce
1 tbsp finely ground dark Mexican dry chocolate
Salt & Pepper to Taste (sea salt and white pepper)
2 tablespoons corn starch
To prepare:
Saute onions & garlic over medium heat until translucent (soft)
Add beef and brown just a little bit
Put meat and onions/garlic into a heavy pot
Add all the rest of the ingredients
Bring to a boil, then reduce heat to a simmer,
Let simmer for about four hours. Mix cornstarch with 2 Tbsp warm water, and add to Chili until it thickens.
Put resultant mixture on a warm corn tortilla with guacamole and pickled onions, or go Gringo-style, by putting the chili in a bowl topped with cheddar cheese and freshly chopped white onions.
