White ones are halibut. Black are black rockfish (aka black bass). Orange ones are Yelloweye rockfish. Long brown one is a ling cod

ETA: second picture is a pink salmon also called a humpy

Some folks won't type the "o" so they're not taking the Lord's name in vain. Jews particularly tend to avoid it out of respect for His name, whether "God" or "Jehovah/Yahweh". Some, both Christian and Jewish, will even go so far as to type "the L-rd" or "Alm-ghty", although I've never witnessed those two personally. I wouldn't be surprised if the Menonite community near me tended to do that though.

Some Jewish people will also use the literal translation of the Hebrew spelling of "Jehovah" - YHWH - instead of the name, or even use a term ("HaShem") that literally translates as "The Name".
