    and so it begins....the briskets come out of the fridge at 1. Smoker starts at 3:30. Briskets on at 4. Target date to grind - 8pm.

    Out here by the lake!
    Thinking of doing a standing rib roast. Just two of us so a two rib roast will be more than enough. I will have to tie it so it doesn't fall over.
    Take the bones off. Either do them seperate or save them in the freezer. I brown the rib bones off the braise them with beef base, shallots & mushrooms. Add roux & sour cream .

    Lost in East Texas Elhart Texas
    Okay, I'm going to do some burgers, hot dogs, sausages this evening and then start my smoker for the whole chicken, and the pork loin. Then Monday evening I will grill the T-bone steak the wife picked up yesterday. That should keep us going for a couple of days. I also plan on making some potato salad, baked beans and homemade french fries as well.
