    Well, I'm doing the low carb thing right now, and while there are lots of "low carb" bread offerings out there, you can't find a cornbread that is low carb. But I do have a question for everyone, and it might start a war. Sweet cornbread, or not? My Mamaw would have been ashamed to serve sweet cornbread, but that's my family. What is the consensus?

    As "bad" corn bread!

    This is America....!! Make your cornbread....the way you like it!!

    Now for a twist.

    Two boxes Jiffy corn bread mix. 1 can cream corn. 1 can regular corn...mix together, and bake in your favorite cast iron contrivance. (adding peppers & such to suit)

    Add about 15 minutes to baking time....(to allow the juices to evaporate some)

    Me?

    I like to take a big chunk. Place in a bowl and smother it with yankee stew.

    Or? Serve as a side with CRACK CHICKEN!

    Or? Smother it with "creamed chicken/turkey stew"....

    Carry on! (digesting bacon, eggs, grits, toast & melon...Spare Parts is taking his post breakfast snooze)

    No sugar in the cornbread - hell, my grandparents couldn't have spared the sugar for frivolous stuff like that back in the day! And those frugal habits carried through to my mother and to me.

    Cornbread must be kinda moist and sweet.
    Eating dry unsweet cornbread is akin to eating dirt!

    Sugar doesn't make the cornbread moist. I've had plenty of oversweetened, crumbly dry cornbread at restaurants.

    Without the sugar it still tastes good, just not like a dessert cake.

    We called them corn dodgers, ya bunch of city dudes.
    Corn dodgers are deep fried dalops of corn bread batter. Crispy outside moist inside.

    Or made on a hoe or shovel. Corn meal boiling water and what ever else was around for flavor then cooked till brown in some hog fat.

    Use duck eggs instead of chicken eggs in cornbread. So moist it is almost like cake. Served with;

    With pinto beans that have a nice thick bean juice.

    With fresh black-eyed peas with thick juise and snap beans.
    Both the above with some salt pork properly rendered in them.

    By itself with melted btter and honey.

    Dammit, now I'm hungry.

    Looks like two T-6 Texans are down at the Reno Air Races. From what I've been able to find out, they went down after the gold class T-6 race, when the racers were in the landing pattern. Looks like neither pilot made it.


    Sad end to the last National Championship Air Races to be held at Reno. Next year they'll be somewhere new.
