I went on a guided mule deer hunt in northern Utah in 2013. The guides (2 brothers) each had a Christensen Arms Remington 700 in 300 ultra mag. They regularly guided people on long distance hunts. The gentleman that paid for.my hunt shot a huge bull elk at 750 yards and dropped it where it stood. I shot my mule deer at just over 200 yards with my .308. There criteria was anything over 350 needed more punch then 308 and 06 could offer for an ethical kill. Anything in Texas to 400 yards is good to go with eithr , but bigger and or beyond, get the right tool for the job

I'm partial to .308. The Remington Mohawk 600 (same action as the XP-100) in particular. I doubt I will ever take a hunting shot over 300 yds.

I've read some gay shit here, but somehow you just shot up to number one.

Must be impressive for a number 2 like a 7 mag shooter to be the first in anything.
Jokes on you I've never owned a 7mag and I question 80% of everything you type. Maybe you missed the smiley at the end or you just by passed it.

308W. I shot garand in 3006, wow. And Tanker in 308W. My henry 308 or marlin 30/30 will do anything I want. The AR10 308W was fun but too heavy for this old guy. Anybody that can hit the target freehand @ 200 yds is a hero to me. Just reality. Long shots are for benchrest or prone. Don't kid yourself.

.308 is easier to find ammo, but the 30-O6 is more flexible. For your purposes it can shoot accelerator 55g at longer ranges for varmint and all the way down to 220g for bears and truck blocks at short range. In between are a lot of good hunting rounds.

I am trying to decide on a rifle and cartridge that will not break the bank and will take any game in Texas/Oklahoma up to 600 yards. I'm also looking at this from a preparedness angle for what kind of ammo will be more likely to be available if it gets hard to find again. What are your thoughts? Will 3030 still be effective at that difference? I lean 308 for various reasons, but I'm also fond on 3006 and lever guns. TIA
At 600 yards the 30.06 is the clear winner, plus the wide variety of ammo available.
The 308 is also good out to 600 yards and ammo a little cheaper but not in the variety of loads that the 30.06 offers.
The 30.30 is just not effective at 600 yards/ although at 200 or less where most of my shots are, I prefer the old saddle ring carbine;) downside is that the OLD 30-30 Winchester will cost more than an older bolt gun in either of the above calibers.

I am 74, my last Colorado kill was at moving game 500 meters away, offhand with a 7 Rem Mag- I was 70 then. Okay it did take me 3 shots to bring the big buck down ;)
I now mostly hunt Texas with a 1952 Steyr Mannlicher Schonauer ( yep transitional with both markings) in 308- it is light and handy- although I have a Leupold 2.5 to 7x and mounts set aside I use the express iron sights

You will want a good scope.

30-30 is fine for 100-200 yard shots at white tails in brush country.

If you are looking at hunting, rather than self-defense, a bolt action 30.06 is probably best for long distances.

    Practice will be vital.

3 shots at 500m, how many hits? You really took that shot, freehand standing? Why? How long to hike the distance to get to the target? Yup, saw Butkis take a ram shot across a river and down it - can be done. But took an hour to find/get a boat across the river.
