    had to go in to work today. stopped at a mexican kitchen on the way. i made sure i ordered enough to have leftovers midshift.

    no meat at the grocery store. english sparrows came around during the Thursday melt, got a few of them but they just add some chunks to the gravy.

    so this evening was time for a small feast!

    Cabin fever cooking.

    Never heard of a flat iron steak until a year or two ago. First couple I broiled, or on the pit ... good, but wasn't all that impressed.

    This one went in sous vide at 132 F for about 5 hours, after being thawed from the freezer, and with no seasoning at all.

    Then seasoned it all around with garlic powder, pepper, and Tony's instead of salt; let it cool for a couple of hours and broiled in the oven on high for 4 minutes a flip.

    One of the best steaks I've had in years ... leftovers going in with the eggs this morning.
