    I was hoping to do a thread on blackened fish today but the interstate beaver with the cleanest restrooms in the country was offended by something the captain of the boat did yesterday and passed a harsh judgement on him.;)
    Step one is to acquire venison

    the meal is going to be one of the two on the right taken back in December.
    After cleaning and processing( all done at home by me)
    Step 4 is take the tenderloins out of deep freeze

    Bike ride done. Next thaw and trim tenderloins, add salt and pepper and put back in fridge until cooking time.

    The back straps or the tenderloins? I know Kudu are big but 3’ tenderloins......wow
    Tenderloins. It was pretty funny as what you kill over in Africa the meat is not yours & generally sold. I was hunting with my buddy & his dad. The old man was on the caveman diet & not getting enough to eat. I went down to the skinning shed/cooler & helped myself. The skinner/tracker spoke fine english and asked if I had permission. I laughed & said phuc em, he laughed harder. The support people in camp never see any meat ven blood shot meat, so I tossed him 2 flanks.

    I am hoping there will be some bargains to be had on exotic hunting in Texas this year. Especially for cull animals

    Years ago during the draught I remember the Y.O. Ranch sold $450K worth of game animals @ their annual auction. I told my chef/hunting buddy we should go to an auction & see what animals actually cost. My guess you could buy @ auction far cheaper then a cull hunt unless you were hooked up. The young kudu bull I culled in Africa had a busted leg. I spotted him the day before, first by seeing his tracks. When I told the SIL of the owner of the ranch he wondered why I didn't put him down then. I told him I did not want to get struck with a trophy fee on small horns.

    Side note;
    The buck on the left was taken out of the gene pool due to a distinct lack of decent antler growth for a 2 year old deer. Note the absence of brow tines. This is a deer that needs to be taken out before it can get its DNA into the pool.

    When I attended Master Naturalist school, the TX Game Biologist who taught us called such deer, "BIOLOGICALLY INFERIOR" & he would agree that such specimens should be OUT of the gene pool.
    (Some state's G&F departments give out "bonus tags" to anyone who "checks in" a spike or deer with racks like that. one's.)

    That buck is a FINE example of what our instructor was talking about.= BIOLOGICALLY INFERIOR.

    Inasmuch as I'm MOSTLY a meat-hunter, I'd take that one out of the gene pool in an instant & right into my chest freezer. = It's HARD to chew antlers.
    (Btw, do you know anyone who wants a BAD CULL Axis removed from their property?? - I want to make a BUNCH of "invasive species" chili, with the addition of feral pork scraps, & BBQ this year.)

    SATX, I have had venison CFS. It's pretty danged good!

    Fwiw, in the fall of 2017 I cooked enough chicken fried steak, cream gravy, home-fried potatoes & biscuits to feed our entire Lion's club.

    i got not even one complaint about having used FREE venison for the CFS from a fellow who was moving out of town & gave me all of his frozen venison. = Mostly the sounds of eating.
