Baboon is right. Mayo can add a lot to some foods. And I'll be honest, it took me some time to embrace using mayo other than on a sandwich too.

Exactly, mayo is used in actual cooking in addition as a condiment. The main ingredients of mayo are eggs and oil. I make a John Wayne Casserole (biscuit bottom crust, taco meat, onions, peppers, tomatoes, cheese topcrust) and mayo is a major component of the topcrust.

A lot of dipping sauces and condiments are mayo based as well.

I watch the Kent Rollings videos. Good stuff. I learned to cook on a campfire.
Lived in a trailer park in Pasadena in the 1980s. Neighbors found out and scoffed, so I challenged them. I made beans and bread on a campfire in the yard and brisket in a homemade smoker. My exwife, bless her city heart, she could bake really good , made yeast rolls in the house. Everyone took their own leftovers home.
    Everyone but me.
They ate my camp biscuits and not my ezwife's yeast rolls. She would not speak to me for weeks.

Cast iron cookware was made for camping. There is just something that a campfire adds to the flavor of the food.
