Old water heater and propane tanks work well for that. Even the 30 lb tanks make a decent smoker for smaller cuts if you do it right. Cut roasts or briskets into pieces big enough for 2, bacon fat on top and a small wood fire. My son made it for me. Works great. Does really well for smoke chicken liver too. Ohhh so good.A decent smoker doesn't have to cost an arm and a leg you can actually build one pretty pretty cheap
