I have a Traeger Smoker that is a decade old. Just put a smoke Daddy Pro PID Controller on it. Keeps the temps to +or - 5 degrees. I have a Temp Taker that hooks up to the cloud. I then cut on Alexa and all I have to do is ask her to check the grill temps and food temps and she tells me I can then resume my nap or armchair duty watching TV. It also has a food temp alarm. It let it run all night long. I don't wrap my Meats. They turn out nice and tasty. I prefer a 50/50 Mix of oak and pecan pellets. If electric smokers are wrong then I do not want to be right as the song says. I have four Webers for Steaks, burgers, dogs, sausages ect. I have one weber that is dedicated to chicken wings it has a rotisserie on it that can do 8 lbs of chicken wings.
