    Dried around here with oak smoke and what we call 20/10/10 lotsa black pepper and garlic and a little bit of the finest whiskey you find.

    1 cup brown sugar
    1/4 cup creole seasoning,,,,,,, Tony Chacerre's
    A little chili powder, maybe a little onion powder and paprika.
    Sprinkle to taste
    Works good on eggs and any meat.

    I am confused, as neither of those so-called "recipes" give much indication of what you are actually doing to the venison to create dried venison sausage. LOL

    Sorry, I totally missed the sausage part. How i make jerky. Most of the dried sausage I have tried has to much seasoning. Don't like a lot. And most sausage has so much fat it goes rancid if you don't refrigerate it. Well made stuff for hiking is good trail food short term though.
