    I've recently gone to the Dark Side. Man why did I stubbornly wait so long to get me a pellet grill? Texas Pride, I guess. They're awesome; so versatile, so easy and very forgiving. Hard to screw up the cook.
    But I switch everything to the pellet smoker all summer to keep as much load off the a/c as possible..

    Do yourself a favor. Got buy some bacon. Lay down a large piece of nonstick foil on the rack. Fold up the sides and corners to make a shallow (1/2 ish) pan. Lay out the bacon and run it low and slow for awhile, then maybe crank it up a bit depending how crispy you like it.
