I would not advise encasing your EMT and wiring in a ridged insulation. Things always change. I would run my vinyl backed insulation between the panels and the perlins and then run any electrical you have between the perlins. I'm going to wait and let them finish and then install my electronic conduits and run my wiring...then have the spray foam applied.
