Become a professional knife sharpener?
I've thought of buying a car and parting it out. Not sure how that would compete against the salvage yards but being near Austin, there should be some demand.
I don't know if you'd call them professionals but I see guys doing that on the side of the road and selling custom knives too.
Get a freezer for the back of my truck and sell steak door to door.

A friend if mine does laser etching. Seems like more hobby than business.Buy a laser cutter or CNC wood cutter as well as a 3d printer and sell one off items or nitch items.
