    Today I gave my smoker a good seasoning run after not using it since before Thanksgiving. At the moment I'm using half oak and half pecan. Tomorrow early AM I'll be firing it up, should have a nice hot bed of coals from burning overnight, and throwing on a brisket and a turkey breast.

    Gonna be some damn fine vittles at the TXAR hacienda tomorrow evening!

    Closely watching the BBQ sauce thread for good recipes. Haven't really found a bottled sauce that I really like but I do have a few recipes using bottled sauce that I'm about to put there.

    DAMN! Did you make a smoker out of a submarine?

    Thats really cool though. I like seeing different bbq pits

    I bought it from a smokehouse that went out of business. It was built out of a commercial propane tank. They called it Fatman after the bomb. They had Little Boy also but I missed getting it by just a few minutes. Would have been awesome to have had both even though I would never had use for that much.

    Nice! Wood good choice, i go to fredricksburg once a year to get a load of peach wood.
    Run the peach for smoke, little no heat, pecan for heat, wrap oak to finish!!
    Nice smoker my man!!! Mine will run this weekend!!!

    Just got it fired back up, temp set and brisket on. Turkey will go on later today.

    Sterling, what does the Peach wood do for flavor? I've always smoked using but bearing wood (that outta get the jokes going, if it doesn't I'm dissappointed). Never tried fruit wood.

    Why no Mesquite for you guys? My dad swears by it but he is also a serious creature of habit.

    I like Mesquite for grilling but only use it sparingly in the smoker. It burns too hot to smoke with only Mesquite. Too hard to regulate the temp. At least that has been my experience.

    I think my dad uses 1/4 Mesquite 3/4 Oak or something like that maybe for that reason.
