Are you fasting today?No smoker this weekend but the grill with chicken thighs Friday, burgers & dogs Sunday and steaks on Monday.
Take the bones off. Either do them seperate or save them in the freezer. I brown the rib bones off the braise them with beef base, shallots & mushrooms. Add roux & sour cream .Thinking of doing a standing rib roast. Just two of us so a two rib roast will be more than enough. I will have to tie it so it doesn't fall over.

Yep. I wrap in butcher paper at 165 and pull at 203. Cook at +/- 250Not familiar with the above, are you trying to hit an internal temperature of 203°?
