I’m on a diet but I’m hungry for pancakes. This is an old family recipe. Nothing speaking, but they’re tasty. Just thought I’d share.
Pancakes
Several cups of flour
Tablespoon of baking powder
1 egg (or two if you want)
Pinch of salt
Milk to the consistency you like (thin cakes, less milk....thick, more milk)
Mix in a bowl, and pour on an oiled skillet or non-stick pan/griddle. Cook until the exposed side of the cake begins to dry and is covered with bubble pinholes, then flip.
Personally, I like my cakes fried in a little more oil so they’re crispy around the edges and thin, like a crepe.
Maple Syrup
Boil 2 cups of water, bring to a boil. When it’s boiling, slowly pour over one cup of sugar and one cap full of maple extract in a metal mixing bowl. Stir until dissolved. Add more water sparingly if need be to dissolve the sugar. That’s it.
