The trigger on my M&P15 is the stock factory trigger. works well enough, but the 243 has a 2 stage trigger and I really like that. I like having a very clear indication of when it is going to go bang.

How hard is it to swap out triggers? Which 2 stage triggers should I look at? Are they adjustable so I can control how much pressure is needed?

You can interchange the triggers pretty easily, the whole mechanism is held in by two pins. The Rock River Match 2-Stage is alright, if you want something cheap.

Some are adjustable, some are not. As stated, the RRA NM is decent, but if you want trigger goodness right out of the box, thnk Geisselle, Timney, or Wilson TTU.

Geissele SSA is a nice step up from an RRA for not much more money. I have killed an RRA before...it died around 1.5k rounds. Turned into a long, creepy, single stage. RRA replaced the hammer and all is well.
