Well I should have gotten up at 3:00 am instead.

One hot in still running hotter than I like. Other then choking it out not much that I can do about it. Between the chicom meat probes & the factory thermometer I say let it go. I don’t suppose any American company make a heat probe thermometer?

I had planned on smoking this weekend but got invited to my son's yesterday. He bought sirloin steaks and ground them into burgers then smoked them on his wood smoker along with some cajun sausage. Those were good! Couldn't fire it up today either, meeting daughter and her husband for lunch at an Italian restaurant...guess who gets to pay?

Instead of wrapping it in foil I used the foil pan then covered it. I don't have the commercial wide foil & hate seaming it all together. For those that wrap in butcher paper get you groceries in paper bags & use them. save the money for more meat.

And y'all wondering why I aint revealed the smoke ring is because I woke up with a gut ache, I think it was the green chili pork stew I ate yesterday evening.

I wish I'd have known this on the 4th of July. I wrapped my pork butt in butcher paper and really liked the results. I'll file this away for when I run out.
