    Darn, carrots in fried rice! I've never seen that in any restaurant in any Chinese neighborhood before. Onion, spring onions (scallions), bean sprouts, eggs, pork or chicken or shrimp or beef (or all together as desired - if any desired), soy or peanut oil, soy bean sauce and cooked unfriendly white rice would be more like it for me, maybe some msg or salt. Sadly they use carrots & peas in Chinese places near where I live now.

    I use "Innovasian" Chinese Style Rice
    Chinese-Style rice blended with long grain rice, peas, onions scramble eggs
    and a dark soy glaze.

    The secret:
    Day-old cold rice.
    Trust me.

    Just toss it in a wok or skillet, add oil, scrambled egg, soy sauce and whatnot.

    Glad someone mentioned using pre cooked rice. And let it come to room temperature before frying. Enough very hot oil.

    Pronstar might know how to make Vietnamese Special Fried Cake with Eggs. I’d walk over fried rice for that.

    The way we learned on Okinawa,
    Day old steamed rice, not boiled rice.
    Oil, or butter
    Egg
    Meat if you can afford it. Over there, they could feed a family of 4 for a week on a chicken and a couple fish.
    Whatever vegetables you can afford to put in it.
    Soy sauce.
    Cook meat and vegetables in the oil. Then add the egg and stir until cooked, mostly cooked anyway.
    Add the rice until hot.
    Add soy sauce as desired.
    Mom had a Sew Girl, Sooki. She could make a shirt, a pair of pants or a dress in a day. Just show her a picture and let her measure the person it was for.
    She could cook even better. Way better than Momma.
