    I know that others have posted the classic Rotel recipe. I cam across this one, on the Hatch can, so I thought I'd just add it. Looks like the Rotel approach to me (sorry about the pic; cell phone cameras!):

    Just curious as how to others make nachos.

    Mine are quite simple, but I'm always looking for different variations to try out.

    I use the round chips usually. Cover them with some refried beans, some shredded Mexican blend cheese, and topped with sliced pickled jalapenos. If I happen to have some, some sliced smoked chicken or taco meat before the cheese and jalapeno.
    Use high quality cheddar and sometimes add some taco meat to the refried beans.

    Occasionally put a little brisket on the beans, then top with cheddar and jalapeno.

    My uncle, who worked for a nationally known dairy company making cheeses, once told me Velveeta is only worthy of being trout bait. I took his advice and have never knowingly eaten it. Cannot recall ever catching a trout with it either, I suppose even they did not like it much or maybe my uncle gave the fish the same warning.
