    I liked the ribs last week so much I did it again.

    Gas grill, 2 of the 5 burners all the way down as low as they would go. Temp reads around 310.

    David’s Meat Market bbq rub on both sides.

    Masterbuilt Gravity Series 560 charcoal burner. Ease of pellet, temps up to 700*. Stays +\- 5* so long as charcoal is in the bin. Four built in temperature probes.

    A 16lb bag makes for a 12-15 hour cook. Want flavor? Add wood chip or hardwood layer. Today was about four pounds of charcoal with oak chips sandwiched in, giving a 6+ hour burn at 225 for the first 5 hours and then 175* for the remainder.

    Gets to temp in <10 mins and stays there as long as you want.

    Is there a way to shut off the air flow to snuff out the charcoal like one does with the BGE? Or do you just let the charcoal burn it’s self out?

    You kill the fire by blocking the airflow, but it’s not as efficient as a BGE or kettle in suffocating the fire in my experience. I haven’t had this long enough to figure out why or if/how that can be improved on as MB implies you can fill it up and burn just what you need.

    It does cool down very quickly, though.

    Thanks for the info. I’m really tempted to buy one. My old Weber Gas Grill is about at the end of it’s life. Thinking hard on getting the Masterbuilt 560 like yours as a replacement, to go along with my BGE.

    The MB 560 is pretty much BGE capability with an easy button.

    Chili on the stove. Yes it has beans in it. I am but a poor working stiff with a bunch of kids and need to stretch it out a bit. Made with ground turkey. Will be served over jasmine rice as that's what the better half likes.

    Darn, I got a white onion half in the fridge I should have cooked up with the ground meat.

    Also, used a beer for the base. It adds a bunch of subtle flavors.

    Out here by the lake!
    Wife went for vittles shopping today. After spending $203.00 there was really nothing to fix for dinner when it got put away. I started to order a pizza from Marcos as they have a new location real close by but the line order wasn't having it.

    Luckily our favorite Vietnames joint recently reopened. All I can say is I one very happy boy!

    Last night had a good steak, with potatoes, corn, green beans and home grown green beans. Wife only ate half of hers, so she has leftovers, again. I'm starin down a frozen pizza, trying to figure out if I want it or just make some eggs.
