Prime brisket. Turned out super good and oddly in only 10 hours. My typical journey to 203 degrees is 15 hours. I think it’s because the only other thing on the smoker the entire time was one rack of babybacks. I keep threatening to get a larger smoker- but my old tricked out OK Joe offset keeps putting out product like this.
