Man you're making me hungry. Love me some bacon. I've never made my own. I used to work for Smithfield Foods (pre-Chinese buy-out) as a Region Mgr. and so I know a lot about bacon and all things pork. That just looks wonderful there. My son has a Komodo grill too and loves it -very tight control of temperature, etc. - perfect for this project! Please post some pics of the finished and first couple of slices!

I need to start making our own bacon again, just been putting it off while being so busy the last few months. I still have plenty of pink salt, all I need is the pork belly and HEB always has them. Maybe in a few days.

Just finished getting my dry brined Bourbon/Maple bacon curing. The other half the pork butt seasoned for the smoker. Crushing the black pepper in my Molocajete sure messed up my sinuses.

It should be worse when make my pastrami rub.
