I’m partial to Japanese steel...I use a Global Santoku and Chef’s knife.
No interest in a full set, but I would like a Global pairing knife to complete my mini collection.
We use Henkels serrated steak knives. Cutting on dishware is too hard on a straight edge, they dull quickly.
