    You regular milk technically doesn't have to be refrigerated until open. But shelf life isn't that long. Seriously. Back when containerized milk was first sold it wasn't refrigerated, but people freaked out and wouldn't buy it. So now it's refrigerated.

    Is powdered milk really an adequate substitute? I don't drink milk, but do use it while cooking. Fat free milk seems pointless to me.
