I won't be OC'ing very many places because I know my limitations. Any two guys, even wimpy ones could likely get my gun if they did just a bit of pre-planning and were determined.

There's nothing wrong with that self-assessment. Nobody should do anything they're not comfortable doing, and concealed is still a valid option.
