There are some blue cheeses that can have a ripe odor like Stilton for one. Liederkranz is a cheese similar to limburger and oddly enough is an American cheese.

I like most of the stinky cheeses especially at room temperature. I have limberger about once a month. Stilton and gargonzola are also regulars on my table.

Nah, those who went in for that delicacy said it tastes like pork. Their name for it was "long pig"!

Room temperature for ripe cheese for sure unless its 70 or above, humidity plays into it as well.
