From scratch corned beet hash

I picked up a marked down corned beef this morning at the store. After drinking beer I’ve at a neighbors I decided I might not want to smoke in a couple of days, so on to boil it went

Damn beers had me filled up, so a late dinner it is. I thought about a couple of eggs on top but it was a passing thought

There is room for improvement. Next batch I run the diced potatoes by themselves to crisp them up more, then add in the corned beef. I really had to hold back and not eat Renfield’s share. I used some roasted garlic that I keep on hand and now I have that mellow garlic taste in my mouth.

About three eggs sunny side up and some hot sauce on the side and it would be a kickass breakfast! One of my favorites!

No bell peppers for breakfast for me! I’ll eat them any way but not at breakfast.

Just finished eating two Ruben sandwiches. Now for a slice Coconut cream pie. I might even have a glass of milk.

One can of corned beef, small, can of green chilies, and some extra onion. Going to dice up some frozen seasoned potato wedges that I have. Add two or three fried eggs to that, and I’ll let you know how it comes out.
