    Those blocks are slow. Takes a while to get the temp up. Not a problem if you've got the time. I'm usually in a rush.

    I've had a BGE now for 3 years and we cook everything on it we can. Spatchcock chicken is amazing! Pulled pork is another favorite of ours. I have cooked several briskets on ours as well and it will hold 225 degrees 16 hours without me ever touching it. Pizza is a whole different experience as well.

    When Watermelon is cheap & in season try grilling it!

    I’ve never tried spatchcock chicken on my BGE. And I’ve never tried pizza on it either.

    We had a crawfish boil tonight and started out with grilled oysters. They were really good! I didn't measure anything but rough estimates are:
    a stick of butter,
    1/4 cup of white wine, I used PinoGrigio,
    1T minced garlic,
    1T oregano,
    1T basil
    Put it all in a saucepan to simmer.
    Grated roughly 1 cup of parmesan cheese
    1/2 T basil
    1/2 T oregano.
    Shucked 50 oysters and put them on the grill 20 at a time and added a spoon full of the butter mixture. Grilled until almost done. Sprinkled a small amount of cheese over each and let melt. Don't over cook!
