    Last couple of nights, I decided to eat a little lighter, and cooler, so I made a salad with some grilled chicken, lettuce, tomato, onion, dill pickles, bell pepper, mushrooms, croutons and bacon bits. Used some ranch dressing and had some iced water with it. Pretty danged good.

    So during the holidays when Bone In Ribeyes are on sale in the value pack we have been eating them. 3-4 per package I have been cutting the bone & some meat off all of them & freezing it. Today I did them up braised them in their own fat & rendered that down. Added Better then Bouillon, mushrooms, shallots, tomato paste & thyme. Reduced that down twice add some roux & sour cream. Over egg noodles it was killer!

    Tonight is my bride’s calorie conscious bean, turkey, and brisket concoction. Can’t call it chili because it has beans (thanks Goya). Man it’s good.

    Oh- and if y’all don’t know what this is, I highly advise you go to the Tabasco website and buy a bottle. It’s higher than a giraffe’s coochie but truly worth the money. We buy 10 or so every time there’s a sale.

    Smoked beef cheeks yesterday... I seasoned it with cajun seasoning, fresh rosemary from my garden, and a little brown sugar. Let it marinate in the fridge over night. Filled the pit with mesquite and oak from my property, and smoked it for about 5 hrs at 250°. Ate it with a side of rabbit food. Great beefy flavor with lots of gelatinous bits.

    I put a certified organic grass fed beef roast in the crock pot with potatoes, onion, carrots and sweet potatoes.

    I cooked black eyed peas with the left over beef cheek... I put Knorr chicken tomato broth, diced onion, nopales, jalapenos, dry peas, and the cheek meet in the pressure cooker for 20min. Yesterday the cheeks were brisket consistency; today more like barbacoa. Fucking delicious.

    I hate regularly scheduled meats! Friends I lived with when I first moved down to Houston were like that. Same food for eveyday of the week. I know it made her shopping easier.

    Our menu centers mainly what we are in the mood for. We sort of planned to have burgers last night, but the wife had desire for spaghetti instead, so the burgers got moved to tonight instead. I'm also taking a brisket out of the freezer to thaw so I can smoke it tomorrow.

    Smoking thick cut Hatch bacon with veggies. They’ll smoke at 225* for about 30 mins, then go up to 375 to finish in 10-15 mins.

    Ok so after me coming on here and crying I can’t find Hatch chili’s ....... yep, walked in Brookshires and had to step around them they were so up front and center.

    OMG! Jana just roasted it right there on the stove, mixed it in with caramelized onions and we made Hatch chili cheeseburgers with oven fries.

    Wow! Needless to say I’m going back for some more. Wow......
