    Tonight rib-eyes & bacon & cheddar french fries. I'm going to cut the bacon in 1 1/2 pieces & air fry them in the toaster ove. Drain off the majority of the grease & throw the frozen fries on top & do them nice & crunchy. Sharp cheddar over that until melted. I think I'll do a horseradish mayo seeing as I don't have any sour cream.

    Seeing as all I had for lunch was a slice of cherry pie & a nap it's fixing to happen. Made my horseradish mayo. Steaks are tempering on the counter. Was thinking about a cocktail, but no mixer for my shine.

    Damn if that wasn't one of the better meals I've had in a while! Found some V-8 & had a Bloddy Mary with dinner. Just took some tramadol because the cooking of dinner has my back hurting. Poor dog is said there wasn't more fat from the steaks for his dog food.

    Seeing as how well my bacon cheddar fries turned out the other night I wanted breakfast spuds. I sliced up a roll of Jimmy Dean #1 roll & air fried in the toaster oven. While that was cooking & fine diced a big jalapeño & shallot. Pulled the sausage out & spread the diced shallot & jalapeño in the grease, then topped that with 2 cans of diced new potatoes. That got salt, pepper & paparika & when the diced spuds showed nice browning I topped it with sharp cheddar & melted that. With over medium eggs on top & sausage on the side it was real good.

    This is a a prime ribeye that’s been dry aging for about three weeks.

    Step one was put it in the smoker just long enough.

    Step two is to get a 700* fire going.

    Step three will be a minute or so on each side to finish.

    Sides will be a Caesar salad (sans anchovie this one time) and grilled asparagus.

    Pre-dinner cocktail is a Hendricks Martini
    Wine will be Sisterdale Winery Five Blend
    Post dinner is Blue Bell Strawberry Vanilla

    Will finish the evening is Knob Creek small batch and a Cohiba.

    Spent Friday afternoon and evening, and part of Saturday morning grilling and smoking. Did a small brisket, a pork tenderloin, a whole chicken, leg quarters, assorted sausages, hot dogs, burgers and brats. Got enough meat and sides to feed a large army! The wife made potato salad, macaroni salad, and baked beans that I cooked on the smoker to add some smoky flavor.

    Everything turned out excellent. It had been a few years since I had cooked a brisket. The smoke ring was perfect, it was tender and moist, and the flavor was beyond great. The pork tenderloin turned out quite good as well.

    Going to load up a few plates and take some to my father to chow down on for a few days.

    Had a couple of good friends come from out of town Saturday and we also shot a few rounds. Or actually quite a few rounds! Got to oppotunity to shoot some interesting guns yesterday. It was a bit warm yesterday, but we had a great time shooting guns, visiting and eating some great BBQ.
