    That looks good. I wish I wasn't the only one in my family that liked fish otherwise I'd grill it more often.

    I live alone. If you don't mind left overs, you can cook some really good food just a couple of times a week, then alternate and you're set. Let the others eat cereal or frozen food until they learn to appreciate what good food tastes like.

    The down side is, I don't order salmon at most restaurants because mine tastes better than what they serve.

    I did that a lot when I was single and in between wives. Plus, I would also take some to work for dinner, and saved a bunch of money, rather than buying dinner like some of the other guys.

    Wednesday evening, the wife made some killer chicken spaghetti, and garlic toast. So Thursday it was leftovers. Still danged good.

    Tonight, it's a pepperoni and mushroom pizza with beer and a Dutch apple and caramel pie for dessert.

    Baby back ribs cooked on the BGE and corn on the cob cooked in the Instant Pot.

    Smoked some pork ribs, chicken and steaks. 6 hours for the ribs, 3ish hrs for chicken and 40mins for the steaks, all between 150&220 degrees. Had corn, potatoes, green beans and bread for sides. My eyes were way too big for my stomach but food was great. Well worth holding 2 umbrellas over the smoker for about 15 mins, got soaked and the wife thought is was pretty funny.

    Got the grill going yesterday evening and cooked some hamburgers, some nice T-bones, smoked sausages, boneless chicken breasts, and some brats. The T-bones were excellent! Seasoned just with salt and pepper and a touch of garlic powder. The burgers were seasoned with salt, pepper, garlic powder and Tony's cajun seasoning. Up until about two weeks ago, that beef was walking around mooing in the pasture across the road!
