    My heads full of them! If only I could cut & paste my brain. I'm sure if I posted how I make mine spelling & grammar nazis would come out. Besides someone would say it aint traditional

    Who gives a damn if it tastes good ... and shrimp always tastes good!

    I've got a few jambalaya recipes learned from my Cajun Mom, but chicken, not shrimp.
    Gotta adjust the recipes a bit for shrimp, so hesitated to post one for the same reason.

    I sent CVGunman the recipe. If he likes it he can post it. No cajun or creole kinfolks to get recipes from. I like to eat so I learned to cook. Julia Childs & Jacques Pépin taught me what I know.

    Mrs Whistler and the daughters are always after me to write my recipies down. I don't know how much of things I put in there, how do you write down "about this much"?

    There are a few I've written because I worked on them for years like cheesecake but the rest are just in my head.

    Cooking is more about technique, taste, ingredients & desire then anything. Once you learn the basics without taste or desire your nothing. My chef buddy is still amazed at some of the food I throw down.

    Yep, recipes get you a starting point. Most cooks don't tell you everything they do to a recipe from instinct ...

    Making a garlic/Parmesan mashed cauliflower as we speak, no longer measure the ingredients, and while it might be a bit different every time, it's always good.

    ETA: Good as, if not better, and arguably healthier for some of us, than mashed potatoes ... I garontee.

    Weekend vittles are going to be pretty good!

    Going to smoke a couple of whole chickens, and sausage.

    Sunday morning, wife is going to do a pot roast in the crock pot, with fresh carrots, potatoes, onions and green beans. Along with dressing, potato salad, deviled eggs, and baked beans.

    I might even do some grilled veggies too.
