    I have a Traeger Smoker that is a decade old. Just put a smoke Daddy Pro PID Controller on it. Keeps the temps to +or - 5 degrees. I have a Temp Taker that hooks up to the cloud. I then cut on Alexa and all I have to do is ask her to check the grill temps and food temps and she tells me I can then resume my nap or armchair duty watching TV. It also has a food temp alarm. It let it run all night long. I don't wrap my Meats. They turn out nice and tasty. I prefer a 50/50 Mix of oak and pecan pellets. If electric smokers are wrong then I do not want to be right as the song says. I have four Webers for Steaks, burgers, dogs, sausages ect. I have one weber that is dedicated to chicken wings it has a rotisserie on it that can do 8 lbs of chicken wings.

    Got a Green Mountain Pellet grill on black Friday sale, and used the money savings to get the pizza oven attachment, as a smoker it is easier for me to use now than my offset wood smoker, has wifi phone link so I can make adjustments even when not with it. The pizza oven turns it into a true wood fired , cooks a pizza in 3-4 minutes and EVEN makes a store bought pizza taste good. Very happy and glad I bought it. Even more important is Wife LIKES it

    If you look on YouTube you can get quite a bit of information about pellet smokers.
    I've got a Oklahoma Joe Highland, and yeah, it's a pain in the ass to keep the temperature stable. I'd smoke more often if I didn't end up spending the whole day "hovering" over the fire.
    From my casual research, Yoder and Houston's Pitts & Spitts are the best pellet smokers, but pricey... I may treat myself, someday.
    Bought my wife a Diamondback fire pit for Christmas several years ago, and with it and B & B charcoal, I grill a pretty decent rib eye. The Weber got put into retirement once I figured out the Diamondback.

    Well heck! I thought that the whole idea of pellet smokers was to illuminate this.
    Sorry I wasn't clear...
    The Okie Joe Highland is an offset "stick burner". That's why I'm counting my pennies and considering a pellet smoker. While the Highland has thicker wall steel than some I've seen, it's still not thick enough.

    Now, from deep in the heart of Texas, down around San Antonio, across the alley from the Alamo (all lyrical references to Texas), a bit of something different on electric smokers.

    I've been using a Traeger pellet smoker for about 6 years; my family and friends were impressed with the upgrade on my outdoor cooking. I like it a lot and plan to keep it, use it, enjoy it.

    Recently, I purchased an electric smoker sight unseen from an online auction site. Details were sketchy and with some online research I was led to believe I was bidding on an SM066 Amerique from CookShack in Ponca City, OK. I was the high bid and got the unit for a very nice price. I took it home and cleaned it up, ordered a new temperature probe and threw in eighteen chicken thighs as a test smoke. It went well.

    CookShack is a fifty year old company that makes commercial, residential and competition smokers. Brand new, an SM066 runs $1900, is a stainless steel box with high performance fiberglass insulation in the walls. Temperature stays very stable. The electronic controller on the top (looks like a first generation digital clock mounted on a shiny dormitory refrigerator) allows you to set temperature, time and target temperature for the meat probe. TALK ABOUT friends and family noticing the UPGRADE on my outdoor smoking!! I've made smoked chili: AWESOME! BBQ chicken thighs: Really GOOD (an upgrade from MEH, OK), then I smoked 14 racks of Pork Ribs (all in one four hour smoke): DIVINE pork ribs. I cannot wait to smoke a brisket.

    The CookShack SM066 Amerique holds up to 50 pounds of food and does not need babysitting. Great corporate culture (full disclosure, I grew up a couple counties away) and game changing equipment. Lots of good reading including lifecycle of major components and tips for competition meat preparation. Have a look.

    As a "purist" I think all that misses the point.

    A machine can stamp out a perfectly serviceable knife, it can cut every bit as well as any knife made. Try as it might it will never be the same as a hand forged Damascus made by a skilled craftsman.

    If all you're wanting to do is lay a bit of smoke on some meat you can buy a smoker that will do everything but serve it. You can say the product is indistinguishable but its not the same.

    Do what your pride and priorities allow but don't try to convince me a Chihuahua is a Rottweiler, they're both dogs after all.

    My buddy McRib has won several casual rib competitions with heat n’ serve Costco ribs.

    Does the end result taste good?

    If so, I don’t really care how it got that way - pellet, electric, old-school.

    I got a Mastercraft electric box smoker for a birthday gift from my wife. Never got a single good result from a long cook in it. Shortly afterwards, I got a ceramic egg cooker and have not looked back. Totally awesome results every time from a long smoke to a 1000 degree reverse sear.

    The Mastercraft has been relegated to beef jerky only duty and collects dust most of the year on my mother in laws back porch.

    guilty. I wouldn't own a pellet smoker.
    I said that for several years. Since getting one as a birthday gift, my "stick burner" smoker and charcoal grill have sat unused for a year now. My gas grill has been lit once, and that was because the pellet grill/smoker already had 2 briskets, 3 racks of ribs, and 4 pounds of sausage one it when my wife decided we need to cook some hotdogs too.

    I have not tried the Big Green Egg or a Yoder or any other smokers/grills/cookers/outdoor ovens.
    They all have reasons people buy and use them. Going back to the OP wanting to SIMPLIFY with an electric smoker, I submitted my first blush experience with an electric smoker. It was dead ass simple and full mouth delicious. Retail is above my means but I found one at auction and love it. Still love my Traeger pellet grill for similar reasons. The electric smoker makes great food, shortens cook time and meets the OP criteria.
    You can't intimidate or insult me by saying an electric smoker is not a good way to prepare food. But you can influence me to use the IGNORE switch reserved for certain kinds of folks. Just saying...

    A buddy has a Mastercraft he likes to use. I have had a ton of Q off that smoker. But its not the same flavor as smoking over a wood fire for 10 hours.

    My .02 cents....
    I've done them all. With the exception of an egg type cooker. Electric, gas, stick burner, charcoal. Still have my 5' x 20" offset stick burner that I'll use for large cooks.
    I recently purchased a Masterbuilt 560 Gravity Feed grill/smoker and for most of my outdoor cooking will not use anything else now. Large enough for a 22" wide packer brisket, I can grill at temps up to 700 deg for a good sear, or I can go low and slow for things like the brisket I did last weekend. Can use briquettes, lump charcoal, and in several cases of owners, real wood. Digital temp control w/fan keeps the cooker at a +/- 3 degrees.

    They’re game changers for sure. Nothing like cooking with real wood (like a stick burner) and being able to manage you’re temps like a pro (electric smoker).

    I cook on stick burners, charcoal, wood & charcoal, I’ve owned 2 electric too and NONE of them can touch the quality, simplicity, and overall great food that comes out of our pellet cooker. The best overall cooker I’ve ever owned hands down (what the hell does hands down mean anyway?)

    It's apparently an old saying that came from the world of horse racing. If you're so far ahead towards the end of a race that you can slack off the reins, an action that apparently is accomplished via dropping the hands to loosen the reins, then that is referred to as winning "hands down". Over time, this has become a synonym for decisively, obviously, without much effort, etc.
