When one reads about the weight of harvested animals what is the common method of weighing used in Texas, total body weight or weight of the eviscerated carcass?

Depends on what you are weighing for. Live weight is used for keeping records for TPWD ( MLDP Program) on deer, and major embellishment and forced perspective photography for pigs so you can brag online to people who don’t know any better.;)

We typically weigh our deer after dressing. We do it more to keep a record/general idea of the herd we hunt. Pigs typically just get drug off or left be it at the deer lease or on the farm. Once you've weighed enough of them you can get a decent guesstimate on weight within 15-20lbs and there are far fewer 200lbs + wild pigs out there than most would have you believe.

I’ve never weighed an animal due to the fact I just don’t care and it serves no purpose in my world.
Most animals are weighed after dressing though.

I held a contract for 5 years to manage the fallow deer in a wood owned by a wildlife charity in the UK. We also kept records of the dressed weights. All the data went towards their conservation plan.
